To ensure the nutritional adequacy of a menu for a specific sex, age group, activity level, a nutritional analysis is completed. The nutritional analysis provides a basis for the dietitian to approve a menu.

Although most facilities have different menu requirements, the basic one falls under the ACA  standard which requires menus to meet the RDA's. Whether or not a facility is ACA-certified, this standard is the most common reference. A minimum number of calories is usually required along with the RDA. Calories served are usually based on an average, with these levels being typically greater in prisons as opposed to jails and detention centers.

In recent years, dietary guidelines have changed and many facilities are including more health-conscious selections as part of their overall menu. Criteria such as 30%-calories-from-fat or the food pyramid are seen more often as part of menu planning.
